3 cups chicken (or poultry), chop up in bite sized pieces*

1 cup poultry or chicken broth (preferably homemade)

1-2 Tbsp . butter or coconut oil

1/2 small onion, diced

1 medium red bell pepper, diced

1 Tbsp . red chile powder

1 teaspoon cumin

1 teaspoon garlic clove salt

4 oz can of chopped eco-friendly chile

6 oz of red salsa

1/2 cup heavy cream

1/3 cup yogurt or sour cream

16 oz grated cheese (I made use of creamy Jack)

6-7 homemade tortillas (or reduced carb tortillas of preference)
