Chicken Shawarma Kebabs

8 chicken thighs, diced

1 tablespoons of essential olive oil

1/2 lemon, juice

1 tablespoons of shawarma seasoning

1 tablespoons of dried parsley

Salt and freshly ground pepper

Grain-Free Tabbouleh

2 cups chopped fresh parsley

5 roma tomato plants, seeded and finely diced

1 cup chopped fresh mint

2 eco-friendly onions, sliced

2 tablespoons of hemp hearts

2 tablespoons of essential olive oil

1/2 lemon, juice

Salt to taste

For Everyone

1/2 cup labneh

1/2 cup Kalamata olives

Inside a large bowl, toss together the chicken, oil, fresh lemon juice, shawarma seasoning, and parsley. Season with pepper and salt to taste. Skewer the chicken and refrigerate not less than one hour before cooking.

Preheat the oven to 375ºF.

Arrange the skewers on the baking sheet. Bake the chicken until it’s golden and reaches an interior temperature of 165ºF, about 25 to half an hour.

As the chicken is baking, inside a large bowl, toss together the parsley, tomato plants, mint, eco-friendly onions, hemp hearts, and fresh lemon juice. Season with salt to taste.

Serve immediately using the labneh and Kalamata olives or store within the refrigerator for approximately three days.

Fresh Tuna Salad

4 5-ounce cans sustainable tuna in water

2 celery ribs, diced

1 carrot, peeled and shredded

1/4 red onion, finely diced

3 tablespoons of essential olive oil

1/2 lemon, juice

1 tablespoons of Dijon mustard

Salt and freshly ground pepper

For Everyone

8 celery ribs, reduce sticks

2 cups red grapes

1 cup almonds

Inside a large bowl, combine the tuna, celery, carrot, red onion, essential olive oil, fresh lemon juice, and Dijon mustard. Season with pepper and salt to taste.

Serve immediately using the celery sticks, grapes, and almonds or store within the refrigerator for approximately three days.

Poultry Taco Filling

1 tablespoons of oil

1 yellow onion, diced

1 garlic clove clove, minced

1 lb ground poultry

3 tablespoons of taco seasoning

Cilantro Lime Cauliflower Grain

1 mind cauliflower, riced

1/4 cup chopped fresh cilantro

1 lime, zest and juice

Salt and freshly ground pepper

Smashed Avocados

2 avocados

1 lime, juice

Salt to taste

For Everyone

2 cups halved cherry tomato plants

2 orange peppers, diced

Inside a large skillet, heat the oil over medium-high temperature. Add some onion and prepare, stirring frequently, until it might be soft and translucent, about 3 minutes. Add some garlic clove and prepare until it might be aromatic, about thirty seconds. Add some poultry and prepare, breaking up using the side of the spoon until it’s cooked through with no longer pink, about five to six minutes. Stir within the taco seasoning and season with pepper and salt to taste. Prepare, stirring, for an additional two to three minutes. Place it aside.

Inside a steamer basket over boiling water, steam the cauliflower grain until it starts to soften, a couple of minutes. Transfer the cauliflower right into a large bowl and stir within the cilantro, lime zest, and lime juice. Season with pepper and salt to taste.

Right before serving, in a tiny bowl, mash together the avocados, lime juice, and salt.
