☀︎ Roast Cabbage

1 whole eco-friendly cabbage

1 tablespoons of extra virgin essential olive oil (EVOO)

1 teaspoon salt

1 teaspoon freshly ground pepper

Preheat oven to 375°.

Half the cabbage, then work in 1/2” slices. Put them evenly onto a baking sheet. Drizzle the oil within the slices, and sprinkle pepper and salt them over.

Roast for forty-five minutes, until tender and golden.

☀︎ Roasted Butternut Squash

1 butternut squash, peeled, deseeded, and sliced thinly

1 tablespoons of EVOO

1 teaspoon salt

1 teaspoon dried sage

1 teaspoon dried oregano

1/2 teaspoon dried thyme

2 teaspoon Simple Truth fresh rosemary oil, minced

Chuck the ball squash with EVOO

Adding the salt and herbs and toss again.

Spread evenly onto a baking sheet, and roast at 375° 30-40 minutes, until tender.

☀︎ Sautéed Mushrooms

1 tablespoons of EVOO

2 cloves garlic clove, minced

1 large box Simple Truth cremini or baby bella mushrooms, sliced

1/2 teaspoon salt

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1 tablespoons of balsamic vinegar

Warm the EVOO inside a skillet on medium heat.

Add some garlic clove, and prepare until slightly golden. Careful to not burn.

Add some mushrooms and salt.

Prepare for ten minutes, or before the mushrooms have considerably reduced in dimensions and released their water.

Add some thyme and oregano, and then prepare on medium or medium-low heat.

Once the mushrooms are tender, and also the liquid has cooked off––about 10 more minutes–– remove from heat.

Add some vinegar to deglaze the pan.

Season to taste with increased salt as needed.

☀︎ Rosemary oil Fried Lentils

(they are best fresh, do half batch should you not be prepared to eat them at the same time. For those who have extra, reheat them in mid-air fryer or even the oven to crisp again)

2 cups cooked lentils (avoid red lentils)

2 teaspoon EVOO

1 tablespoons of dietary yeast

1 teaspoon Simple Truth fresh rosemary oil, minced

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon pepper

Chuck the ball lentil using the EVOO, adding the rest of the ingredients.

Pour to your air fryer (or spread evenly onto a baking sheet).

Air fry at 375° for ten minutes, or bake at 375° for half an hour.

☀︎ Cranberry Orange Relish

2 cups fresh cranberries

1 fresh orange, peeled & chopped

1/4 cup sugar

Put the cranberries, orange, and sugar inside a mixer, and pulse to combine. The relish ought to be spreadable, and ingredients well blended, although not too smooth.

☀︎ To put together the sandwich:

In your favorite sandwich bread, layer the cranberry relish, cabbage, mushrooms, butternut squash, and friend lentils.
