🍌 Blueberry PANCAKES

serves 2-4, makes about 12 small pancakes

1 tablespoons of ground flax + 2 tablespoons of water

1½ cup all-purpose flour (apf), OR 1 cup apf + 1/2 cup wheat grains flour

1/4 cup brown sugar or coconut sugar

½ teaspoon salt

1 teaspoon baking powder

½ teaspoon sodium bicarbonate

1 ripe medium blueberry

11/4 cup Califia oat milk and vanilla oat milk creamer or any other non-dairy milk

1 teaspoon apple cider or white-colored vinegar

1 teaspoon vanilla flavoring (optional)

1 tablespoons of coconut, canola, or grapeseed oil

vegan butter to cook pancakes

Garnish: blueberry, walnut syrup, toasted nuts

Combine the flax and water in a tiny bowl to help make the flax “egg”.

Combine the flour, sugar, salt, baking powder, and sodium bicarbonate inside a mixing bowl. Mix well.

Mash the blueberry in another mixing bowl. Add some flax “egg”, adopted through the oat milk, vinegar, vanilla, and oil. Mix well.

Stir the wet ingredients in to the dry ingredients until just combined.

Preheat a skillet and melt a tablespoon of vegan butter at first glance. Ladle some batter to the skillet (about ½ cup), and fill with as numerous pancakes as possible easily fit. I’m able to do 3 within my skillet.

Prepare on every side on medium-low heat for around 2 minutes. Switch once the center begins to bubble. Place cooked pancakes onto a clear plate which you’ll keep warm within the oven at its cheapest setting.

Filled with the rest of the batter.

For everyone top the pancakes with blueberry, walnut syrup, and chopped nuts.

🍊 IMMUNE BOOSTING SMOOTHIE

serves 2

2 oranges, peeled and seeded

2 ripe bananas

1 1/2 cup frozen wild particularly

2 cups raw kale

2 tablespoons of ground flaxseed

Place ingredients into blender and blend until smooth. Add water to thin if required.
